I don’t know about you, but nachos are one of my favorite, easy dishes to put together when I’m hosting. Just turn on the oven, add your toppings, bake your nachos, garnish, and serve! Ready in 10 minutes, nachos are always a good idea when you’ve got a crowd to feed. With these turkey and black beans nachos, you can satisfy even the hungriest guests while keeping the meal high protein and healthy!
Healthy Nachos for All!
We’ve added some healthy ingredients like lean, high-protein ground turkey, high fiber black beans, and fresh veggies to top these nachos. And I can’t forget to mention the delicious and nutrient-packed creamy jalapeno sauce! Altogether, this muscle-building, heart healthy dish will hit the spot and fill you up!
Our Creamy Jalapeno Sauce
Made with Greek yogurt, avocado, jalapeno, fresh herbs, and lime, this creamy jalapeno sauce is simply to die for. Not to mention, it’s just so easy to make! It’s also high in protein, healthy fats, and antioxidants, so you can hit your health goals while enjoying this topping. If you like, you can drizzle this sauce over top of the nachos or serve it on the side as a dip! Either way, it will give this dish a delicious, spicy, and healthy boost!
Get These Nachos Ready for Your Next Gathering
Start by preheating the oven to 350 degrees Fahrenheit on the broil setting and heating a medium skillet on the stove. Once hot, add your lean ground turkey and taco seasoning to the pan and cook until all of the pink has been cooked out, breaking up into chunks. In the last minute, add the black beans and let them get warm.
Meanwhile, spread the tortilla chips in an even layer over a large, foil-lined baking sheet. Top with the cooked turkey and black bean mixture, then sprinkle with cheese. Place the tray in the oven and broil for about five minutes, or until the cheese has melted and is a bit bubbly.
While the nachos are in the oven, add all of the creamy jalapeno sauce ingredients to a food processor and blend until smooth.
Once done, remove the nachos from the oven. Spread the other toppings including the shredded lettuce and salsa over top. Then, drizzle or serve with the creamy jalapeno sauce. Go ahead, dig in! Or shall we say dive?
- 1 tablespoon olive oil
- 1 pound lean ground turkey 93% lean
- 2 tablespoons taco seasoning
- 15 ounces black beans canned, drained and rinsed
- 4 cups whole wheat tortilla chips
- 1 1/2 cup Mexican blend cheese shredded
- 1 cup lettuce shredded
- 1/2 cup salsa
Creamy Jalepeno Sauce
- 1 cup Greek yogurt plain
- 1/2 avocado skin and pit removed
- 1 jalapeno stem and seeds removed
- 3 tablespoons fresh dill stems removed
- 3 tablespoons fresh chives
- 2 garlic cloves
- 1 lime juiced
- 1/2 teaspoon salt
